🍵 Matcha Mood - Fire Clay - The art of a Parisian brunch

There are mornings that are written in silence.
A ray of light slides across the table, caressing the reflections of flamed sandstone, while the steam of a matcha tea rises like a suspended breath.

Let's imagine a flamed stoneware service from the 60s - teapot, pitcher, milk jug, biscuit tin.
The brown, blue, and black tones blend into the light like an abstract painting. It's raw, deep, and sensual.

In the teapot, a tea smoking kukicha ....

Kukicha , also called twig tea , is a marvel of subtlety in the world of Japanese teas. Produced from the stems, ribs and branches of the tea plant , it is distinguished by an atypical composition which gives it a rare aromatic lightness .

A tea that acts as a setting around a matcha soufflé pancake with a chocolate and sesame center....

Ingredients :

  • • 2 egg yolks, 3 whites
  • • 2 tbsp. milk
  • • 2 tbsp flour
  • • 1 tsp matcha powder
  • • ½ tsp yeast
  • • 20 g of sugar
  • • 1 pinch of salt + Butter for the pan

Black Heart:

  • • 30 g of dark chocolate
  • • 2 tbsp. liquid cream
  • • 1 tbsp black sesame paste

Steps:

  1. Dark Heart Ganache — Melt the chocolate with the cream and black sesame seeds. Let cool.
  2. Matcha batter — whisk the egg yolks with the milk, matcha, and flour. Beat the egg whites until stiff, then fold in gently.
  3. Gentle cooking — pour a little batter, add a spoonful of ganache, and cover. Cover the pan and cook over low heat until the pancake is puffed and golden.
  4. Plating — Arrange the flamed service on a plate, add some blackberries, a veil of matcha and edible flowers, and......

In the milk jug: whipped almond and honey cream waiting to be enjoyed with our pancake

A quick preparation to add a milky and plant-based touch:
Whisk 100 ml of almond milk with a teaspoon of honey and a pinch of fleur de sel.
Pour into the milk jug - at the table, it is used as a light sauce, to pour over the pancake
A slow, slightly sensual gesture. Brunch becomes a ritual.


Not forgetting, in the stoneware pitcher: the morning detox juice

Ingredients:

green apple, lemon and cucumber.
Bright, vibrant, refreshing—it cuts through the sweetness of the pancake.

Just mix:

  • • ½ green apple
  • • ½ cucumber
  • • the juice of half a lemon
  • • a few mint leaves
  • • a dash of coconut water

Strain, pour into the pitcher, and let stand in a cool place: the color blends with the stoneware glaze, between water green and blue-gray.


Finally, in the biscuit tin, some fresh flowers stuck...
